winner, winner, chicken dinner...

How pretty is that?

I was watching a cooking show yesterday morning  with Jamie Dean, who made an entire chicken dinner in a cast iron skillet. Brilliant, so I decided to try it out and the dinner turned out delicious. This is what I did. 
After cutting out the back of the chicken, I...
  • oiled the chicken and laid it in the skillet.
  • squeezed fresh lemon juice on it and then added Greek seasoning and garlic powder and pepper.
  • tossed potato wedges in oil and the same seasonings put on the chicken and placed those around the chicken.
  • added some cut carrots.
  • finished the chicken off with herbs I had in the refrigerator along with garlic cloves and put it in a 350 degree oven.
  • added some butter to the top of the chicken before it was completely finished cooking and let it rest before we ate.
Voila! A real one-pan wonder!
