This is so simple to make and how much more healthy can a dish be? It is so green and beautiful.
Pasta, Broccoli, Peas and Artichokes
1 bag of frozen broccoli
1 bag of frozen peas
1 can of artichoke hearts
1 pound of pasta
2- 4 garlic cloves
crumbled bacon
salt, pepper, basil, crushed red pepper and marjoram
Parmesan Cheese
Put broccoli and peas in a colander, keep them separated as they will cook at different times.
Run cold water on them and let sit for about 15 minutes.
Drain and cut artichoke hearts into quarters.
Heat oil in a pan.
Add minced garlic (2-4 cloves).
Add broccoli, salt, pepper, basil and marjoram.
Saute on medium heat until cooked but still firm.
Meanwhile, boil water for the pasta of your choice.
Add peas and artichoke hearts to pan and saute for 5 minutes.
Add crushed red pepper and any additional spices for flavor.
Now add 1 can of vegetable stock for liquid and heat completely.
Cook pasta and before draining the water, add 1 to 2 ladles of pasta water into pan.
Toss pasta with vegetables and top with shredded or shaved Parmesan cheese.
