I wanted to make a creamy, lemon chicken dish so I came up with this idea after searching Pinterest. This is a fun dish; filled with wonderful textures and flavors and aromas. Enjoy!
Lemon Chicken in a Creamy Mushroom Sauce
Ingredients:
- Chicken Breast: filet and pound
- Mushrooms
- Garlic
- Lemons
- Cream
- Parmesan Cheese
- White Wine
- Flour
- Oil
- Butter
- Salt and Pepper
- Italian Seasoning
- Thyme
Directions:
- Filet and pound the chicken breasts.
- Lightly oil and squeeze lemon juice on both sides of the breasts.
- Season with salt, pepper, Italian Seasoning and fresh thyme.
- Let sit for at least one hour.
- Slice mushrooms and a lemon or two for later.
- Oil a pan and add a pad or two of butter; melt.
- Cook chicken; browinging both sides; 4 minutes on each side.
- Remove the chicken from the pan and cover with foil.
- Add more butter, melt, and add sliced mushrooms.
- Season with salt, pepper and thyme.
- Brown and remove from pan.
- Add garlic to pan and scrap the pan a bit with a wooden spoon to get any brown bits lose from the surface.
- Add white wine to the pan and reduce.
- Add in your mushrooms and cream.
- Cook on low heat until a sauce forms.
- Add about a cup of parmesan cheese and when the sauce bubbles, taste and add more seasonings if needed.
- Return chicken to the pan, squeeze some lemon over the dish, cover and let it simmer for about 10 minutes.
- Serve over pasta.
