lemon chicken in creamy mushroom sauce...


I wanted to make a creamy, lemon chicken dish so I came up with this idea after searching Pinterest. This is a fun dish; filled with wonderful textures and flavors and aromas. Enjoy!

Lemon Chicken in a Creamy Mushroom Sauce

Ingredients:
  • Chicken Breast: filet and pound
  • Mushrooms
  • Garlic
  • Lemons
  • Cream
  • Parmesan Cheese
  • White Wine
  • Flour
  • Oil
  • Butter
  • Salt and Pepper
  • Italian Seasoning
  • Thyme
Directions:
  • Filet and pound the chicken breasts.
  • Lightly oil and squeeze lemon juice on both sides of the breasts.
  • Season with salt, pepper, Italian Seasoning and fresh thyme.
  • Let sit for at least one hour.
  • Slice mushrooms and a lemon or two for later.
  • Oil a pan and add a pad or two of butter; melt.
  • Cook chicken; browinging both sides; 4 minutes on each side.
  • Remove the chicken from the pan and cover with foil.
  • Add more butter, melt, and add sliced mushrooms.
  • Season with salt, pepper and thyme.
  • Brown and remove from pan.
  • Add garlic to pan and scrap the pan a bit with a wooden spoon to get any brown bits lose from the surface.
  • Add white wine to the pan and reduce.
  • Add in your mushrooms and cream.
  • Cook on low heat until a sauce forms.
  • Add about a cup of parmesan cheese and when  the sauce bubbles, taste and add more seasonings if needed.
  • Return chicken to the pan, squeeze some lemon over the dish, cover and let it simmer for about 10 minutes.
  • Serve over pasta.
