pumpkin bars with a cream cheese frosting...

I am not a baker and there is an incredible difference between being a baker and a cook. When I cook, I follow the recipe, but I really do not measure. Pouring 2 tablespoons of oil into the pot from the decanter works as does shaking in a teaspoon of pepper. When you bake, that is not the case as you need to take time to measure, and you must be exact when measuring or the final product's texture is affected. That being said...Yesterday, I was fixated on making pumpkin bars with a cream cheese frosting.  I have never made this before in my life and don't know why this was the food of choice to make. Anyway, I spent about two hours after an evening walk making the bars and they were delicious.  The recipe was very simple and the pumpkin bars were both tasty and moist.  The walnuts added a delicious nutty taste and texture to the pumpkin and cinnamon pastry and the frosting added a delightful  creamy, sour taste to each bite. This was time was well spent as the kitchen smelled like pumpkin and Brian and I enjoyed every bite!
