I have never made kabobs with fruit until this week and they were soooo delicious. I found this recipe on Inspired by Charm and Michael nailed it. I did add some yellow squash to the skewers and then made a sauce to baste on as Brian turned the kabobs when cooking four times. (Don't know how long they were on the grill though...twenty minutes? thirty minutes? Something like that!) The sauce consisted of soy sauce and honey and Sriracha so there was a kick to this gooey, rich topper and it just added that little extra flavor and moisture that the chicken and vegetables and fruit needed.
GRILLED PINEAPPLE CHICKEN KABOBS

Here's what you will need:
1 cup pineapple juice
1/3 cup soy sauce
1/3 cup honey
1 tablespoon sriracha
1/2 teaspoon garlic powder
Salt and pepper to taste
1 1/2 pounds chicken, cubed
3 bell peppers (red, orange, and yellow), cubed
1 medium red onion, cubed
2 cups fresh pineapple, cubed
Grilling skewers
1/3 cup soy sauce
1/3 cup honey
1 tablespoon sriracha
1/2 teaspoon garlic powder
Salt and pepper to taste

1 medium red onion, cubed
2 cups fresh pineapple, cubed
Grilling skewers
In a bowl, whisk together the pineapple juice, soy sauce, honey, sriracha, and garlic powder. Add in cubed chicken, cover, and marinate for 2-3 hours.
Once marinated, thread the chicken, pineapple, peppers, and onions on grilling skewers, alternating the items.
Heat your grill to medium-high. Lightly oil the grill grates and then place the kabobs on the grill. Cover and cook over medium-high heat for 12-15 minutes (or until the chicken is fully cooked), turning once during the cooking process.
