this looks amazing for an appetizer...


Cherry crostini with honey ricotta + mint via The Freshcipe Box

Here are the ingredients:
  • 1 baguette sliced (24 slices)
  • ~1/2 cup cherries (pit & slice)
  • 1 cup ricotta cheese. I used low fat. Some people hate low fat. Some people love no fat. I like the creaminess that the fat adds.
  • 2 tbsp honey
  • 1/4 cup fresh mint sliced up.
  • Ground pepper
Slice up the baguette into about 1 inch slices. Bread slices can be lightly toasted in the oven.
In a small bowl mix honey with ricotta. Spread about 1-2 tsp of ricotta on each slice of bread.
Slice cherries in half. Cut up fresh mint. Place cherries on top of ricotta and sprinkle mint over. Drizzle with honey & sprinkle with fresh ground pepper.
Makes 24.
