I made this last night as I was in the mood for a chicken and zucchini dish. It turned out quite well and it's a one skillet meal. Winner, winner chicken dinner!
Chicken with Zucchini, Tomatoes and Mushrooms
Ingredients
3 chicken breasts; fillet
2 cans of diced tomatoes
2 zucchinis - sliced
sliced baby Portabella mushrooms
garlic
1/2 onion - chopped
wine; red or Marsala
1 pound of cooked angel hair pasta
diced parsley and basil to top
Parmesan cheese
Directions
- salt and pepper chicken
- brown on both sides in an oiled skillet and remove
- add more oil and saute garlic and sliced zucchini
- move off to the sides of the pan and saute the mushrooms
- add diced tomatoes and mix together
- bring to a slow boil
- add two turns of wine; red or Marsala
- return the chicken to the pan and cover all the pieces with the sauce
- cover the skillet with foil and put it in a 350 degree oven
- cook for 40 minutes
- remove foil and cook for 10 more minutes
- serve over the angel hair pasta and top with diced basil, parsley and cheese
