Below is the original recipe and here's what I did was:
- Marinate 2 diced chicken breasts in lite soy for about 15 minutes.
- Saute chicken in a skillet until cooked.
- Cook 4 packages of Ramen noodles with 1 seasoning package in boiling water.
- In a small bowl, mix 4 tablespoons of lite soy sauce, 8 tablespoons of chunky peanut butter and 8 tablespoons of Sriracha.
- Add mixture to chicken and gently stir over low heat until the mixture is smooth.
- Drain noodles and keep at least 2 cups of the liquid.
- Add the noodles to the pan and thin mixture with the liquid until you have a creamy consistency.
- Plate and top with scallions.
Ramen Noodle Upgrade

Ingredients
- 1 package Ramen noodles
- 1 pack noodle flavoring
- 1 tablespoon soy sauce
- 2 tablespoons chunky peanut butter
- 2 teaspoons Sriracha chili sauce
- 1/2 scallion, thinly sliced (optional)
Directions
- Boil noodles with flavor pack and drain off most liquid. Toss with soy sauce, peanut butter, and Sriracha. Garnish with scallion. Eat immediately.
