ramen noodle upgrade and upgrade again...

Ramen Noodle Upgrade

I decided to add diced, sauteed chicken to this Thai dish and it was quite fun.  Spicy and peanut buttery and the little bit of scallion added to the plated noodles topped it off nicely. Honestly, it was on the table in less than 30 minutes so well worth keeping the noodles on hand for one of those, "I don't know what to cook!" nights.

Below is the original recipe and here's what I did was:
  • Marinate 2 diced chicken breasts in lite soy for about 15 minutes.
  • Saute chicken in a skillet until cooked.
  • Cook 4 packages of Ramen noodles with 1 seasoning package in boiling water.
  • In a small bowl, mix 4 tablespoons of lite soy sauce, 8 tablespoons of chunky peanut butter and 8 tablespoons of Sriracha.
  • Add mixture to chicken and gently stir over low heat until the mixture is smooth.
  • Drain noodles and keep at least 2 cups of the liquid.
  • Add the noodles to the pan and thin mixture with the liquid until you have a creamy consistency.
  • Plate and top with scallions.

Ingredients

  • 1 package Ramen noodles
  • 1 pack noodle flavoring
  • 1 tablespoon soy sauce
  • 2 tablespoons chunky peanut butter
  • 2 teaspoons Sriracha chili sauce
  • 1/2 scallion, thinly sliced (optional)

Directions

  1. Boil noodles with flavor pack and drain off most liquid. Toss with soy sauce, peanut butter, and Sriracha. Garnish with scallion. Eat immediately.
