Today I made:
- Skinny Soup for the week. Yep, my menu this week will be Kefir or yogurt or a Slim Fast for breakfast, Skinny Soup for lunch and an apple or yogurt for a snack along with my usual 64+ ounces of lemon water. A good thing and I'll feel great come Friday!
- Chicken breasts stuffed with goat cheese, fresh basil and thyme and then sprinkled with black pepper before being rolled and wrapped in bacon. This is for tonight and I thought I'd serve it over organic red quinoa and have steamed broccoli on the side.
- Sage and pepper rubbed pork tenderloin with a brown sugar and soy glaze that I basted on the pork during the last hour of cooking. This will be enjoyed over jasmine rice tomorrow and used for tacos later this week.
