confetti corn...

This is such a fun Barefoot Contessa dish to make and eat.  The colors are beautiful and the fresh taste is amazing. It can be made on the stove or gill which is wonderful as it will then have a

smokey flavor and aroma.  I added the red pepper to the recipe for a bit more color.
Confetti Corn
1 diced orange and red pepper
1/2 diced red onion
5 ears of corn - remove the kernels from the cob
Chopped chives, parsley and basil - about 2 tablespoons of each herb
Olive oil



Heat oil in a skillet and saute onions for 5 minutes over medium heat.
Add peppers and saute for 2 more minutes.
Add butter to the mixture and when melted add the corn.
Salt and pepper to taste.
Cook corn until most of the starch is removed (about 5 minutes).
Add the fresh herbs and serve.
