BEETS
Nutritional Benefits

Marinated Beet Salad
5 beets- trimmed and halved
1 smashed clove of garlic
1 tablespoon of sherry vinegar
2 tablespoons of olive oil
Coarse salt and freshly ground pepper
1/4 cup of fresh mint leaves coarsely chopped
1/4 cup crumbled goat cheese

Put beets in a steamer basket and boil for about 35 minutes or until the tip of a knife can pierce the beets.
Cool, remove skin and thinly slice beets.
Combine beets, garlic, vinegar, oil, salt and pepper.
Toss and refrigerate at least 3 hours or overnight.
When ready to serve, remove garlic and top with mint and goat cheese.
