this week's featured food is...

Spinach...
Benefits:
  • a highly rated nutritious food
  • has a tremendous amount of Vitamin K,which aids in blood clotting and bone health.
  • helps protect against heart disease, some cancers and protects your eyes.
  • contains B6, C, Folate and magnesium.

Pasta Rosa Verde
(This is my version of the dish and it takes only 30 minutes to prepare.  It is both flavorful and fresh tasting and the leftovers are wonderful!)
1 medium onion thinly sliced
2 cloves of minced garlic
1 tablespoon of olive oil
2 pints of grape tomatoes - halved
1 large package of fresh baby spinach
1/4 cup of toasted pine nuts
Gorgonzola or Blue Cheese
1 pound of cooked pasta (Your choice!)     

Saute onion and garlic in oil until onion is tender.
Add tomatoes, some salt, pepper and crushed red pepper for some heat.
Cook until tomatoes are warm and releasing juice.
Stir in spinach and carefully toss until it wilts.
Serve over cooked pasta and top with Gorgonzola and toasted pine nuts.
