Last Wednesday, I posted the Seven Layer Tortilla Pie recipe that I had not yet tried but was making for a birthday lunch we were having at work. It was delicious. I think it took me about 30 total minutes to prepare and after baking, the dish was fresh and light and very flavorful. I added corn to the black bean layer so there was more texture and color and topping each piece with sour cream, salsa and fresh cilantro added a great finishing touch. If I was not making Fried Egg and Avocado sandwiches tonight, this would be my dinner choice!
