fried egg and avocado sandwich with...

spicy coleslaw.  I mentioned this delicious meal earlier in the week as one that I made for Brian and I last Sunday.  It was a great football meal that actually began with our favorite appetizer, Jalapeno Poppers.  The combination of the sandwich and slaw was colorful and fresh and the many flavors that were combined were tasted throughout the meal.  It was "fun" to eat.  A few hints...
  • When I made the coleslaw, I first mixed the sauce in my serving bowl and then I piled all of the vegetables on top.  The ingredients were combined about one hour before we were ready to eat  (This is a great way to prepare salads, too, as everything ends up in one bowl .).
  • Fresh lime wedges were out so we could add more "freshness" to both dishes.
  • Texas toast worked best for the sandwiches as it was the one bread that held up best to all of the layers.
Fried Egg and Avocado Sandwich

Spicy Coleslaw
1 cup mayonnaise         1 tbs. hot sauce
Juice of one lime
1/2 cup chopped flat-leaf parsley
1/4 cup chopped cilantro
1/2 cored and sliced small red cabbage
1 red pepper; cored and sliced
3 sliced scallions
Salt and pepper to taste

Combine mayonnaise, hot sauce, lime juice, parsley, cilantro, salt and pepper in a bowl.
Add sliced cabbage, red pepper and scallions.
Stir before ready to serve to soften cabbage.
Add salt and pepper to taste.
