chicken parmigiana...

Sunday's dinner was Chicken Parmigiana, courtesy of The Pioneer Woman.  I loved the red color of the sauce and the parsley that added both a beautiful green accent and fresh flavor to each and every bite.  Tenderizing the chicken was worth while, but I would have liked to cook it covered, in the oven, for about 30 more minutes in the sauce to make it "fork tender". Be sure to use quality cheese at the end as that did add a delicious final touch to the dish.  A very tasty and easy to prepare dinner. Enjoy!
