I made Gina's Chicken Rollatinie with Spinach Alla Parmigiana last weekend and it was quite tasty. One piece was only 195 calories and I served it on top of a nest of pasta and with a tossed spring salad. You don't need to buy chicken cutlets at the store...save some money and buy chicken breasts and fillet and pound them so each are thin. What was nice, too, was I made this on Sunday morning and all I needed to do was pop them in the oven when we were ready to eat.
