this week's featured food is....

I am going to feature a healthy food and recipe to make with it each week to inspire myself and all to make better choices and to "...eat more plants and trees." So this week, our featured food is broccoli...

Benefits: 
  • nutritious
  • rich in calcium, enzymes and nutrients (carotenoids)
  • high in fiber
  • source of vitamin C, folate, riboflavin, potassium and iron
  • can help fight cataracts, diabetes, arthritis, osteoporosis, ulcers, high blood pressure, stroke, heart disease
  • contains indoles which prevent cancerous tumors of the stomach, prostate, and breasts
Broccoli, Quinoa and Cottage Cheese
This is something I make for my lunch and it is healthy and yummy and delicious!
Steam fresh broccoli and cut into pieces (or cook a bag of frozen broccoli in the microwave.)
Cook 1 cup of quinoa in 2 cups of low fat chicken stock according to directions.
Mix broccoli and quinoa together and divide into plastic containers.
Splash with low sodium soy sauce.
Top with 1/2 cup of cottage cheese (This can be eliminated, but it adds protein and calcium and when it is heated with the other ingredients in the microwave, it gets the mixture gooey and cheesy.)
