stuffed peppers...

Stuffed peppers with a salad and garlic bread on a Monday evening. Here is how I made these tasty treats.

Cut two peppers in half and remove the membrane and seeds.
Sprinkle lightly with garlic salt.
Make 1 cup of white or brown rice.
Set aside.
Mix together 1/2 pound of ground beef and hot sausage.
Add some salt, pepper, basil, and chopped onion.
Add rice and mix so all ingredients are blended.
Lightly stuff pepper halves with mixture and put halves in a glass casserole.


In a separate pot, saute 1/4 cup of chopped onion in evoo.
Add one 28oz can of diced tomatoes, salt, and basil.
Simmer for 30 minutes and spoon over peppers.
Cover with foil and put in a 350 degree pre-heated oven for 60 minutes, basting every 15 minutes.

Top with Parmesan cheese and let set for 15 minutes before serving...enjoy!
