pumpkin bars with cream cheese frosting recipe (continued..)

Yeah!  I have followers and one requested my Pumpkin Bars recipe.  Enjoy!
Pumpkin Bars
  • Preheat oven to 350 degrees.
  • Grease two 9 X 13 pans.
  • Mix all of the following ingredients together with a mixer until well blended:
2 cups of all-purpose flour                         1 cup of chopped walnuts
2 cups of white sugar                                2 teaspoons of salt
1 cup vegetable oil                                    2 teaspoons of ground cinnamon
2 teaspoons of baking powder                  2 teaspoons of baking soda
2 cups of canned pumpkin                        4 eggs

Pour equal amounts of batter into greased pans.
Bake for 25 minutes and cool before topping with Cream Cheese Frosting.
This recipe makes more than 24 pumpkin bars, so if you cut it in half, do the same for the frosting.



Cream Cheese Frosting
Put the following ingredients in a large bowl:
  • 8 ounces of softened cream cheese
  • 8 ounces of softened unsalted butter
With the mixer on low speed, add 4 cups of powdered sugar, a cup at a time, until smooth and creamy.
Beat in 2 teaspoons of vanilla extract.
Coat the Pumpkin Bars with the frosting when they are cooled.
