crab quiche...


If you are in the mood for a healthy, light dinner try Crab Quiche, a spring salad with Italian or a vinaigrette dressing and stuffed tomatoes.  It is sure to be delicious and the prep time for all was only 30 minutes!



Crab Quiche
1/2 cup of mayonnaise                                     1cup of crab meat
2 tablespoons of all-purpose flour                      1 cup of Swiss Cheese
2 eggs, beaten                                                 1/2 cup of diced green onion
1/2 cup of milk                                                1 (9 inch) unbaked pie crust
(I added both salt and pepper;  more green onion would have been nice as well!)

Preheat oven to 350 degrees.
In a bowl, beat together eggs, mayonnaise, flour, and milk until thoroughly blended and smooth.
Stir in crab, cheese,and onion.
Spread into the pie shell.
Bake for 40 to 45 minutes, or until a knife inserted in the center comes out clean.
