taco soup...


Although the weather is getting warmer, for some reason I decided to make Taco Soup last night.  It was easy and it really is delightful.  This morning, I was able to skim off fat which is always good so if your in the mood for some Mexican comfort, this soup will make you happy!

Taco (Mexican) Soup via Brenda G. (I've also included a few changes.)

Ingredients
  • 2 lbs. of ground beef or turkey
  • 1 diced yellow onion
  • 1 can of stewed tomatoes (large)
  • 1 can of Rotel
  • 2 - 2 1/2 cups of beef broth or water
  • 1 can of Pinto Beans (rinsed)
  • 1 can of Black Beans (rinsed)
  • 1 can of corn (I used about 10 oz of frozen corn)
  • 1 package of Taco Seasoning Mix
  • 1 package of Ranch Dressing Mix
Toppings
  • Chopped cilantro
  • Diced scallion onion
  • Shredded cheese (Your choice!)
  • Sour Cream
Directions
  • Brown the beef/turkey and onion until cooked.
  • Drain off grease.
  • Add all of the remaining ingredients and bring the soup to a boil.
  • Reduce heat and simmer for one hour; stirring occasionally.
  • Serve with toppings.
