pumpkin beer bread...

Sweet Erica posted this recipe on her blog, Erica Danielle, and I am definitely making it this weekend as it just screams fall.  Erica just had Lucy, a beautiful baby girl who had to have cataract surgery when she was less than 2 months old.  How amazing is it that at this time in our world; we truly have a medical population that can address any issue, at any age and be successful.  Lucy is going to be just fine and is sure to bring her parents love and joy and countless memories that will last forever. That being said, this recipe looks to be well worth making on a crisp, fall weekend and I'm sure the smell alone in our home will make us happy.
 
Pumpkin Beer Bread via Erica Danielle
 
There aren't too many ingredients and the flavor is great. I wish it were a little more pumpkin-y, but we loved it still.

Ingredients:
  • 3 c flour
  • 1 tbsp Baking Powder
  • 1 tsp salt
  • 2 tsp pumpkin pie spice
  • 3 tbsp honey
  • 1 c pumpkin purée
  • 1 12oz beer
Directions
  • Combine flour, BP, salt, spice, honey and pumpkin. Slowly add beer and mix until incorporated.
  • Preheat oven to 375. Grease a 9x5 bread pan, bake for 50-60 minutes
